Apple Butter

4 quarts organic apples, cored and chopped coarsely
1 1/2 cups Rapadura (finely ground in a Vita-Mix or food processor)
4 teaspoons cinnamon
1/4 teaspoon cloves
1/4 teaspoon salt

Core apples (but don’t peel as long as they’re organic) and chop into quarters or eighths. Place into a Vita-Mix or a food processor and blend until pureed. You should end up with about 12 cups of puree. Place puree in a 5-quart crock pot and stir in remaining ingredients. Cover pot and cook on high for two hours. Reduce heat to low and cook for several more hours—until desired thickness is achieved. Whatever you’ll use in the next week or so can be refrigerated. The remainder can be preserved in sterilized canning jars or frozen in zippered storage bags for later use.

Makes 3 to 4 quarts.
